What is a grease trap and what is the difference between grease trap and Grease Interceptor ?
Grease trap or grease interceptor is a receptacle that traps fat, oil, and grease (FOG) before the dirty water goes to the public drainage system. Water flowing into the kitchen sinks contains oil, fat, and grease from washing of meat and other fatty food items, dishes and utensils. Fat, oil and grease if allowed to enter the public sewage system, will hinder the waste water treatment process at the plant, as the sewage system is not designed to separate oil and grease.
Also, fat and grease when mixed with other waste like food residues solidifies, and hinders the smooth flow of water in the pipelines and causes pipeline blockages and overflows. An overflowing grease trap emits an unbearable odor if left unattended even for a few minutes and is a public health hazard. Customers can be chased away by the unpleasant odor from a leaking or overflowing grease trap in an outlet.
To prevent these, it is necessary to install grease trap or interceptor in every food service facility like restaurant, coffee shops, catering kitchens, processed food manufacturing facilities, worker’s accommodations etc. Grease traps may be installed directly under the sink or outside the kitchen depending on the facility and the volume of food preparation although it is recommended that the grease trap is installed closer to the sinks to avoid pipeline clogging. The size and the number of grease trap required for a facility is determined by the type and volume of food preparation. Larger facilities with high volume of food preparation will require larger grease traps and typically are installed outside the kitchen.
Grease trap and grease interceptor both have the same objective of capturing the fat, oil and grease (FOG) from the waste water. The major difference between grease trap and grease interceptor is in their size. Grease traps are smaller compared to grease interceptors. The standard size of grease traps in the U.A.E is 10, 15, 25, 40, 100 and 135 gallons. Early manufacturers have coded them as CC1, CC2, D, AG1, AG2, A, B, C and subsequently the codes have remained general representing the size. For example CC1 is 10 gallons, AG1 and D are 15 gallons, AG2 is 25 gallons and so on.
Why Is Grease Trap Maintenance Important?
The presence of fat, oil, and grease in wastewater burdens the treatment plant. Bacon grease, in particular, can cause certain reactions in sewage lines, thereby contributing to sewer pipe blockages. How often should Grease trap be cleaned?
Foodservice facilities require grease trap cleaning at specified intervals of once a week, a fortnight or a month depending on the grease trap size. According to Dubai Municipality’s guideline grease traps of 40 gallons and below require weekly cleaning. Grease traps with higher than 40 gallon volume are to be cleaned twice every month at 15 days intervals. Municipality requires a record of cleaning to be maintained at the facility for easy verification by their inspectors. Some international standards recommend at least once a month cleaning of grease trap.
